Today I'm making something super simple and quick and perfect for those who are craving for a little dessert on a carnivore diet. My mini cheesecake bites, 100% carnivore and these are perfect to batch cook a bunch. You can throw it in your freezer and enjoy it literally throughout the year. Thaw overnight and eat it chilled. I'll even show you a really easy hack to make the cheesecake crust if you're lazy like me. And you will only need four ingredients total. So, let's get cooking. This cheesecake filling comes together so quickly. All you need is softened cream cheese, one egg, and a tablespoon of any yogurt. For that extra tang, it is very important for our cream cheese to be room temperature. We're going to add 8 oz of room temperature cream cheese, which is 225 g total. First, we'll soften the texture a little bit more by hand by mixing it and spreading it across the bowl. Now, we can go ahead and add 2 tablespoon of your sweetener of choice. If you need to be strict carnivore, you can go ahead and skip this step. These cheesecake bites will still taste decadent and delicious. I'm whipping this up for my husband while we're here in Hawaii as he has been craving for cheesecake the entire trip. So, I'm going to be using alulose to make an extra healthy and clean cheesecake for him. After mixing together some more, we will now add one of my favorite cheesecake ingredients, yogurt. If you don't have yogurt, you can also substitute it with sour cream. 2 tablespoons of this ingredient will give our cheesecake a nice bit of lightness and a little bit of tang, so it has a lovely depth of flavor, not just a singular note. Now is also a good time to add in 1 teaspoon of vanilla if you would like. Now we're going to mix a little bit more. Once it's nicely combined, we can now add in one room temperature egg. I cracked it in a separate cup and mixed it together so it's nice and smooth. Then I poured it into the cream cheese mixture and combined everything together. Again, here's what the cheesecake filling looks like. It should be nice and smooth, creamy, and silky. I know a lot of you guys can't enjoy cheesecake without the crust. So, if you happen to have a carnivore bar lying around in your house, they actually make a perfect cheesecake crust. And because they are so highfat, they are very malleable. You can just use your fingers to push it down against the paper cup. And there you have a perfect cheesecake crust ready to go. Now, if you don't have a carnivore bar lying around, here is a super simple and easy way to make a 100% carnivore cheesecake crust. We will need skim milk powder. And we're also going to need two sticks of unsalted butter. Let's start off by heating up our pan. And this entire process of cooking our crust, we will be staying at low heat. So on low heat, we're going to drop in our two sticks of butter and just let it slowly melt thoroughly first. And then we're going to take 1 and 1/3 cup of the skim milk powder and slowly pour it into the melted butter. It is very important to not immediately start mixing and stirring. We want this powder to just sit in the melted butter. Okay? So, go play with your dog. Go love on your kids and just let it sit for 10 minutes. The longer you let it sit and harden up and absorb, the better. So, you'll start seeing that it's kind of formed a cookie. And from here, we're going to break this huge cookie into cookie crumble pieces. And then you'll see that at the bottom of the cookie, it's nice and browned and delicious and caramelized. This is what's going to give it that stunning flavor profile in our cheesecake crust. I also want you to know that this cookie crumble is such a genius recipe because you can double up as a carnivore granola for your yogurt toppings. You can literally do whatever you want with it. So, as a cheesecake crust, it's perfect. So, this is what the cookie crumble looks like 40 minutes in. Now, we're going to first drain any remaining liquid and fat from our cookie crumble. So, push down on the cookie crumble so that any residual liquids are drained out. Now, let's say you don't have that much time and you want to just make it in your air fryer. Well, you can actually do it. Just melt your butter into your air fryer pan. I just heat it up at whatever setting just so long as the butter is melted. And then I pour in the same amount of milk powder over the butter. And I cooked it at 300° Fahrenheit for about 10 minutes. And then I broke it apart, moved it around, and did the same thing for another 10 minutes. If you're using the air fryer to make the cookie crumble like me, just make sure you air fry it at 350 at 10-minute increments. Mix it. Cook for another 10 minutes until it becomes nice and dry, almost like a cereal granola texture like this before you use it as your cheesecake crust. Once our batter is nicely mixed with no lumps, it's ready to transfer into our mini cups. I'm using the mini size. That's why I can fit so many into my air fryer. I'm just using a regular spoon to scoop about 1 tspoon of batter to fill up each mini cup. And repeat until they're all filled up. This recipe, by the way, is such a great make ahead dessert. If you use the same amount of ingredients as I did, you can make 20 mini cheesecakes. You can then freeze them for up to 3 months and just let them thaw for 12 hours in the fridge. And they taste so delicious, nice and chilled. You can also refrigerate these for up to 3 days as well. And yes, I travel with my air fryer everywhere I go. That's how much I love air frying carnivore meals and desserts. And with these cheesecake bites, I air fried at 350° F for a total of 12 minutes. Take a look at that beautiful golden color. As someone who cooks a lot in the kitchen for not just her husband, but also for herself, friends, and guests, one of the most time-saving gadgets I've ever spent my money on is this tasty air fryer. Nowadays, as a 7-year carnivore, I basically cook 90% of my meals, meats, dishes, desserts, even in my air fryer. And as you can see, it is compact, sleek, and so easy to use. It is ceramic and also non-toxic. After I cook anything in this tray, I basically throw the entire thing in my dishwasher to clean immediately. And because I wasn't too pleased with how the cheesecake bites kind of changed shape because those mini cups were too soft and not sturdy enough, I then had an idea to fit exactly five within a nice small bowl. And this bowl is oven safe, so I was able to air fry it just fine. And I airfried it again at 350° F for 12 minutes. And it came out perfectly round, beautiful cheesecake mini bite-sized with the same gorgeous golden brown color. Obviously, if you don't care about the look and the aesthetic so much, you can just batch cook a bunch like I previously did and not care about the shape and the size. But because I wanted to really impress my husband when he came back from the gym, I was able to think up of this simple hack of just propping each cheesecake up against each other within a smaller bowl. So, there you go. There's always something in your kitchen that can help resolve a problem. From here, I would quickly transfer it into a plate or some Tupperware and immediately chill it in the refrigerator. If you plan on storing it for a few months, you can go ahead and freeze it and enjoy it at your own pace. But I highly recommend being patient and really letting these cheesecake bites chill and get nice and cold because it tastes 10 times better.
