Fiber is cellulose. That's just strings of glucose. We could use glucose, but we can't extract that glucose. No vertebrate animal can actually make cellulace, which is the enzyme that breaks down cellulose. So, herbivores that eat fibrous plants like cows and ruminants and things like that, they actually cultivate bacteria in their gut, bacteria that breaks down the cellulose because they have cellulose. And the bacteria as a byproduct releases short- chain fatty acids which are 100% saturated. Then they die off and they break those down into proteins and nutrients as well. So they're basically farming bacteria. They're not actually eating the plant. They'll get some nutrients from the plant, but the majority of their nutrients are actually fermentation process that the bacteria go through. And then they actually eat the bacteria. So even cows and gorillas get 70 80% calories from fat, not carbs. And then the rest of it is mostly from the protein.
